Fresh Local Berries Make a Colorful and Delicious Orange Glazed Berry Salad

Strawberries fresh from the farm taste totally different than ones that have been shipped half way across the country. The season is way too short, so we stock up at our local tail gate market while we can and make Strawberry compote to freeze and serve on our cheese blintz soufflé later. We also make lots of fruit salads now for our guests using these luscious red berries. We love to show them off in this Orange Glazed Berry Salad. We serve it to our guests for breakfast alongside a sweet and lemony Dutch Baby dusted with powdered sugar, or baked French Toast with Cinnamon Apples. It’s easy to make and beautiful to look at with all those fresh colorful berries. The orange glaze adds to the eye appeal. Serves 8-10.

 

Ingredients- For the Dressing:

  • 1/4 cup sugar
  • 1/3 cup orange juice
  • 1/3 cup water
  • 1 Tbs. Grand Marnier
  • 1 Tbs. Pure Vanilla Extract

For the Salad:

  • 3 cups sliced fresh strawberries
  • 2 to 2 1/2 cups fresh blueberries
  • 1 cup halved green grapes
  • 1 cup halved red grapes
  • 1 cup mandarin orange slices, packed in juice, rinsed and well drained
  • 10 pieces of curly green leaf lettuce for serving

Directions:

  1. Combine sugar, orange juice, water and Grand Marnier in a heavy saucepan
  2. Bring to a boil and simmer for 12 minutes
  3. Remove from heat and add vanilla. Cool slightly
  4. Toss dressing with fruit in a large bowl
  5. Cover and chill for ~1/2 hr.
  6. Serve on lettuce leaves
